Strawberry Jam
Have you tried making your own jam at home? You’ll be amazed at how easy it is! We’ve got recipes for blueberry jam, cranberry sauce/jam and now this delicious and easy strawberry jam!
Summer is coming quick in Minnesota and my kids LOVE our homemade jam as a snack with peanut butter and rice cakes. This is a low carb option for them - skip the rice cakes and use almond flour crackers if you’re keto/strict low carb!
Use on our crepes, 90 second bread or almond flour crackers!
Recipe:
2 Cups Strawberries
1 teaspoon Lime juice (1/2 lime squeezed)
2 Tablespoons sweetener
1/4 tsp Xanthan Gum
Heat over low to medium heat until strawberries smash. Add lime juice, sweetener and Xanthan gum.
If you want a smoother jam, blend it once it’s cool or use an immersion blender (careful if jam is hot - it can be easier to wait until it cools).
Makes 1 Cup, Serving size 1 Tablespoon

Keto Dad Tips and Tricks
Fresh or frozen strawberries work. I use a low heat if they’re strawberries.
If you want a smoother jam without much effort, cut the strawberries into smaller pieces before cooking them.
If you want a really smooth jam, use an immersion blender.
Will stay in fridge for about a. week You can freeze what you’re not ready to use!
We store them in 8oz mason jars.
Reminder - the rice cakes are a low carb snack for my kids. You can toast a zero carb tortilla, use an egg white tortilla or our almond flour crackers to keep it keto!
