Chicken Ranch Taquitos
These chicken ranch taquitos are easy to whip up and are full of flavor. The best part? My kids LOVE them and they can be made with whatever kind of tortilla you want!
Recipe:
1 lb Shredded Chicken
1 Cup Shredded Cheese (we use Mozzarella)
8 oz Cream Cheese (softened)
2 Tbsp Ranch Seasoning
Approximately 12 tortillas
Mix ingredients in a bowl, spoon chicken into tortillas and wrap. Hold with a toothpick if desired.
Air fry for 10-12 minutes at 325 degrees

Top with salsa or guacamole!
Add avocado to increase the fat
Use a hand mixer to combine the cream cheese and chicken.
This is a great recipe to make the chicken mixture in advance - then stuff the taquitos and bake when you’re ready to eat.
No air fryer? Bake in the oven at 350 degrees for 10-12 minutes.

Let’s talk tortillas! The kids are eating a zero carb tortilla from Guerrero. I have a link here so you can see what they look like, but we get them much cheaper in the grocery store (and there are other brands). The are 25 calories, 7 Carbs, 7 Fiber and zero net carbs. They do have wheat gluten and a variety of other “dirty keto” ingredients. Not the best but not the worst. I do like these because they are a little smaller of a tortilla and the perfect size for the girls.
Nick and I usually use Egg Life Wraps. These are a great Keto/Gluten Free option (we also get them cheaper from our grocery store) that we use for so many things! These are also 25 calories, but ZERO total carbs and 5 grams of protein.
